This is one of Stacey's favorites! Salmon Croquettes. I don't remember why he wasn't going to be home for dinner, but he wasn't, so I found it fitting to stick to my menu and cook them anyway. I took a photo and emailed it to him as a reminder of my menu. He ate them when he got home. I am not usually that cruel and it was so long ago I don't remember why I was so mean!
